Today I have to confess that even though it's just three days before Halloween, I'm currently listening to Frank Sinatra sing "White Christmas" on pandora.
Although I'm crazy about Fall and all the fun holidays and memories that go with it, it ultimately all leads to Christmas!
{The best time of the whole year! ...in my opinion.}
Anyway, this post really isn't about Christmas at all.
It's really about making these deliciously inexpensive fat free re fried beans!
And technically there is no frying of beans at all in this recipe, but they resemble the same thing.
Here's my recipe:
16 oz. pkg of uncooked pinto beans
1 taco seasoning packet
1/2 tsp. ground cumin
1/2 tsp. salt
6 cups water
Add all the above ingredients to a slow cooker/crock pot.
Let it simmer on high for 4-5 hours.
{If you don't have a crock pot, you could add all these ingredients to a big pot and let it simmer on the stove.}
When the beans are fully cooked and soft, drain the water off of them.
Set aside one cup of beans and put the rest in a blender to mash them up.
Then pour the mashed up beans in a bowl and add the one cup of unmashed beans and stir.
And there you go!
Completely fat free and totally inexpensive beans!
Last night I used these beans to make burritos.
I even made homemade tortillas using the recipe Stephanie Nielson provided on her cuisine nie blog.
{I used white flour instead of wheat.}
They're so good!
This is a great little meal on a cool Fall night.

YUM! If I was feeling better that would be dinner tonight! I have always wanted to make my own tortillas (they are SO expensive to buy!)- I am a tight wad I guess:) Thanks for the inspiration now I will have to really do it since you made it look so good.
I've been a weanie to try homemade tortillas...I worry they will taste "doughy"? I'll have to give this recipe a try! :)

kind of off the subject but are you happy with your blender? my krups went ka-put and i've been looking around. i've seen that oster one but i just have no idea what to buy. ours was a nice one i registered for and i've never been happy with it. so a high $ amount doesn't necessarily mean it works well! my best one was from a thrift shop in college. i gave it away when we got married! dumb!
p.s. i've been itching to make tortillas so i'm totally going to now!

I love our blender. We purchased it at Costco about two years ago and it still runs great. I think it was the cheapest one they carried at the time too ($60.00). It was worth every penny because we use it almost everyday for smoothies, etc. Hope that helps!
