I Love banana bread.
I have been using this banana bread recipe since my freshman year of college.
It rocks!!!
It's also a great way to use up old brown bananas that are tempting to just throw away.
Banana Bread
3/4 Cup of Sugar
3 Large Bananas (mashed)
3/4 Cup Vegetable Oil
2 Eggs
2 Cups Gold Medal All-purpose Flour
1 tsp. Baking Soda
2 tsp. Vanilla
1/2 tsp of Baking Powder
1/2 tsp of Salt
1/2 Cup Chopped Nuts (optional)
Heat oven to 325 degrees & grease your loaf pan.
Mix sugar, bananas, oil and eggs in a large bowl with a wooden spoon. Stir in remaining ingredients. Pour into pan.
Bake for 60 - 70 minutes.
Insert a toothpick into the center of the bread.
If it comes out clean, it's done!
Makes 1 loaf.
{Recipe found in this cute little book.}
*** If you're interested in making this bread fat free, substitute 1/2 cup of applesauce in place of the oil and add 3 egg whites instead of 2 whole eggs.
